Entry #5: The first installation of our fall recipe series was pumpkins, now its apples! A perfect fall recipe means it's comforting and usually chock-full with spices. This apple crisp fits right in—it is warm, cinnamon-filled, and just the right mix of sweet and tart. The apples get tossed with lemon juice, maple syrup, and a little spice, then topped with a golden oat crumble that turns perfectly crisp in the oven. It is simple to make but feels like something special, especially when served warm with some light whipped cream. It is the kind of dessert that makes you appreciate the in-between moments. Knowing that we will be leaving soon for college, we are trying to soak everything in. Times when the oven is still warm, when the plates are messy because everyone is home, and everything just feels comfortingly familiar.
ingredients: serving size 4-5
- apple mixture:
- - 5-6 apples, diced
- - lemon or lime juice
- - two tbsp whole wheat flour
- - one tsp cinnamon
- - one tsp pumpkin spice
- - 1/4 cup brown sugar
- - two tbsp maple syrup/honey
- oat crisp:
- - one cup whole wheat flour
- - 3/4 cup quick oats
- - 1/2 tsp baking powder
- - 1/2 tsp baking soda
- - 1/4 cup brown sugar
- - one tsp cinnamon
- - one tsp pumpkin spice
- - salt
- - 1/2 cup cold butter, sliced
- - milk until crumbly texture
recipe:
- Preheat your oven to 350 F and grease your pan. Combine all of your stewed apple ingredients, and mix evenly to ensure the spices are dispersed evenly.
- Place all the oat-crisp ingredients in a bowl. With the sliced cold butter, knead it into the flours with a fork or your hands until you have a crumbly dough.
- In your greased pan, layer the apples on the bottom and the dough on top. Bake the dish for ~25 min or until the crisp becomes golden-brown and the apples have released juice.
- Let it cool for 10 min, and serve warm with some whipped cream or vanilla ice cream. Enjoy!
